It was a beautify, sunny, 61 degrees here in Champaign County today. A great day to wake my smoker from its' hibernation.
My wife picked up a corned beef last Sunday assuming I would cook it on the smoker. We'll probably grab another tomorrow and I'll make this again next weekend.
I tried this last year and it was an A+++ recipe. This year was just an A. I forgot to brine it, and I didn't cook it long enough due to poor planning. Whoops. The rub this year was salt, ground pepper, and ground coriander seeds.
I had to finish the beef in the oven again this year to eat dinner at a reasonable time. The meat was just a touch chewy, but was still much better than any slow cooker corned beef I've eaten.
