Notes: I had the day off so I smoked a chicken for 2 1/2 hours on my Weber Smoker instead of using a rotisserie chicken. I also used a whole wheat wrap instead of a flour tortilla. This recipe was quick, easy, and very tasty. However, I have a slight complaint with the book - it says "precooked rice." The recipe never says to cook the rice and since its precooked I assumed it would cook in the recipe, but 1/4 of the rice was crunchy. I'll know for next time.
