Two from Opening Day

Baseball's Opening Day is a holiday in my world. On paternity leave, I was home with my wife and kids for Opening Day 2015. We made it out of the house around 11:15am to pickup the ingredients for a Chicago Dog. 

I'm not a fan of pickles, yellow mustard, or relish, but the combination on a Chicago Dog is out of this world good. I did leave off the sport peppers as I find they overwhelm the other flavors.

I missed the opening pitch by 20 minutes, but no big deal, it's a long day.

Lunch was a success, it was time to fire up the smoker. We had a pork loin sitting in the fridge which missed its time to shine because my son was born. I seasoned the pork loin that morning with a commercial rub, wrapped it in plastic, and shoved it in the fridge.

Online, many people said smoke the loin for 2-3 hours. A close friend, Shane, said 40 minutes. I was clueless. The internet is a wormhole of bad information and maybe Shane thought I was talking about a tenderloin.

I ended up smoking the 5 pound pork loin for 4 hours at 200 degrees. I pulled it at 153 degrees, and let it rest for 30 minutes. I'll probably pull at 145 next time. The pork loin was tender and slightly smoky. I whipped up an apple topping by cooking the following: 

2 apples
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon fresh grated nutmeg

To finish off dinner, I topped a Hawaiian roll with Cabot Sharp Cheddar Cheese, smoked pork, and apple topping.

Maybe I'm missing something, and/or I'll come across as a prude, but how is pop still a popular thing? To get started, here's a picture of a Mountain Dew from the web.

Here's 77g of sugar. More than 1/3 cup, a little less than 1/2 cup.

I'm not a perfect eater, so I opened up the cupboard to see what comps we had for 77g of sugar. You could have 23 mints. This is not a strong start to support my bias - mints are pure sugar, but still 23 mints!

You could eat a roll of peanut butter sandwich Girl Scout cookies, but you'll have to give one away.

Personally, I'd go with 2 1/2 cups of Prairie Farms Moose Tracks Ice cream. This isn't the low sugar, low flavor garbage either. We only had 1 1/2 cups; Microsoft Paint to the rescue!

Immature Bald Eagle

Today was Lily's first day back on an exercise plan. Time to drop some LB's. I spotted an eagle on our walk around the lake. It was grey, overcast, and windy so the pictures are a bit off. Enjoy.
