I was checking in on Evansville's RPI and how the Missouri Valley was holding up this year. Turns out they've got some duds. I then got lost in Excel Averaging RPI by conference and locating each team's rank. I color coded Evansville, Indiana, Louisville, Notre Dame, and Illinois.

Notes: My biggest beef with ATK's Quick Family Cookbook is the instructions always start with preheating the oven or boiling water. It then moves on to 15-30 minutes worth of chopping, dicing, and sorting. Our new gas stove heats the water quickly and I have 15+ minutes of boiling water before I'm ready to use it.
With my gripe out of the way, this recipe was great. We did 1.5x to have enough for leftovers by including extra whole wheat pasta, bacon, garlic, and cheese. I ran out of freshly grated Parmesan, so I mixed in grated fontina.

Notes: The simple chipotle chili mayo really made this dish zing! I did not prepare this one, it was my lovely wife. She said prep was easy and "this is my first time really frying things."
Cod quality in central Illinois is lacking. I had to triple bag the cod from Meijer home to keep it from stinking up the car and fridge. After frying and adding sauce, I couldn't tell its quality anymore. Next time we might try frozen to save a few dollars. Maybe I just don't eat enough seafood and cod always stinks. Cleanup after this recipe took me back to my 2 days working at Weathervane in Saratoga Springs - yikes! Just thinking about that place makes me never want to eat a chain restaurant again.
My love for economics and education come together for one of my favorite days of the year - Correlation Day! Easily the most creative answer this year was correlation between "Time with Siblings" and "Love of Family."

Notes: The flavors melded fantastically as this dinner far surpassed my expectations. Meijer Italian sausage is not as good as other brands. I'm not sure if it was my frozen kale or the thickness of the sausage, but it took twice as long to cook in the last step as advertised. I'd also recommend chopping up the Italian sausage before serving.
The making of this recipe was born out of what I happened to have in the refrigerator, freezer, and pantry. Italian sausage, kale, beans, and tomatoes. I cut off some dry spots from the Italian sausage, and pulled our semi-freezer burnt kale from the freezer. I did grow the kale myself so it was of good quality. The recipe called for two cans of white kidney beans, I only had one, so I grabbed a can of butter beans that had been in the pantry for a couple years.
